The dish we bring you today in this new instalment of “Cuatro Rayas Cookbook” is incredibly special since we have chosen our Amador Diez Verdejo Cuvée 2017 to pair with it. It is the most artisan and exclusive wine of the winery, coming from pre-Phylloxera vineyards. The recipe must match up to it; so, we are going to suggest a warm salad with marinated chicken breast.
The ingredients you will need are:
- Chicken breasts seasoned with basil, thyme and oregano, onion, carrot, garlic, black peppercorns
- White wine
- Sherry vinegar
- Olive oil and salt.
Step by Step:
– First thing you are going to do is to prepare the marinade; so, put in a pot a glass of water, white wine, Sherry vinegar, laurel, and mushrooms.Stir it very well.
– Fry the chicken breasts in a pan and, later, put them into the marinade so you can cook them on a slow fire for two hours. In this way, they will absorb all the flavour of the marinade.
– Meanwhile, you can prepare the dressing with salt, marinade sauce and olive oil. It will be the perfect dressing for our salad once we plate up the chicken breasts. You can also use a touch of balsamic vinegar, but that is up to you.
Isn’t it a perfect dish for our Amador Diez Verdejo Cuvée 2017? On the nose, this wine shows white fruit and citric and aniseed notes; it also has sweet aromas due to the barrel-ageing, like coconut, vanilla, and liquorice. On the palate, it is fatty, fresh, and intense. It is a perfect wine to enjoy with the recipe we have prepared in Cuatro Rayas.
