Lemon roast chicken and Cuatro Rayas Cuarenta Vendimias Verdejo

We are back with a new gastronomic recommendation. It is a lemon roast chicken paired with our Cuarenta Vendimias Verdejo, a wine intense and clean on the nose with strong fennel and undergrowth aromas. On the palate, it is fatty and long, with an exceptionally long finish. A perfect brand for this recipe we bring you in this blog.

 

The ingredients you are going to need are:

  •  Onion
  • Potatoes
  • White wine
  • Dry thyme
  • Oregano
  • Black pepper
  • Olive oil
  • Lemon
  • Chicken

Follow the steps!


– Rub a baking sheet with a little bit of olive oil: you can use a kitchen brush to spread it easier and not to spend a lot.

– Slice the potatoes and make a “bed” on the baking sheet.

– Do the same with the onions and season with salt and black pepper.

– Take a lemon, cut it, and squeeze a little bit of lemon juice over our baking sheet.

– With another whole lemon, fill the chicken and tuck it well so it can’t come out during roasting.

 – Add a pinch of salt and pepper and cook it for 1 hour and 50 minutes at 200ºC.

– Make a sauce with the white wine, water, thyme, and oregano and pour each 20 minutes over the chicken so it doesn’t get dry.

– When it is ready, take the lemon out of the chicken—it will be well done—, and squeeze it with the juices the meat released. This sauce will serve you as a garnish for the dish.
