Today, in Cuatro Rayas we bring you a new recipe that pairs perfectly with one of our wines. We have chosen an incredibly special brand, since Green & Social Verdejo is the most sustainable wine of our winery and gives value to the environmental and human criteria of the countryside, the winemaking process, the packaging, and even the distribution. Do you know the recipe we have chosen to show you? A magnificent “Spanish-style rice”.
The ingredients you are going to need are:
- Grated tomatoes
- Fish broth
- Green bell pepper
- Olive oil
Follow the steps!
First,heat the fish or shellfish broth in a pot.
While it is warming up, in a frying pan, make the sofrito. Sauté the garlic, onion, and a little bit of green bell pepper—all finely chopped.
Add the prawns to the sofrito for a couple of minutes and take them away. Do the same with the mussels.
Now it is time to add the squid, the monkfish, and the grated tomatoes.
Leave it all cook through and add the rice.
Cover the rice with the fish broth you were heating up at the beginning of this recipe.
Let me tell you a tip: warm up a glass of water in the microwave and, when it is hot, put in some saffron threads and mix well. Add this saffron water to the broth to enhance the flavour and colour of the rice.
