Stuffed aubergines for Cuatro Rayas Cuarenta Vendimias Ribera del Duero

In Cuatro Rayas, we set out to make the perfect recipe for our Cuarenta Vendimias Ribera del Duero. On the nose, it is an intense and clean wine, with aromas reminiscent of liquorice and ripe black fruit, mulberry, ripe plum… Very well structured and complex in the palate. All this made us think of mince stuffed aubergines and we can assure you that the result is impressive.

Take a pen and paper and write down the ingredients you will need:

  • eggplant
  • onion

The first thing you need to do is to cut the aubergines in half and make a few scores on the surface. Season with some olive oil, salt, and black pepper and cook them in the oven. Meanwhile, chop some garlic, onion, and bell pepper to make the sofrito. Once the aubergines are cooked, take them out and scoop their flesh to cook it with the sofrito. Add the mince, tomato sauce, thyme and parsley and let it cook. When ready, fill the aubergines the mix, put a slice of cheese and put them again in the oven, so they become juicy and the cheese melts. It is this simple. You have your mince stuffed aubergines ready. So now you just have to take your wine.
