’61’ Dorado en Rama and a traditional stew with artichokes for these Holidays

In the middle of December and on the eve of Christmas, hot dishes are the perfect choice to star at our table and that is why today we want to surprise you with an artichoke and potato stew. Simple and traditional, but really tasty.

And now, a fundamental question: What wine pairs perfectly with a dish like this? Without a doubt ’61’ Gold in Branch , a unique wine with which we want to give continuity to the original elaborations of the area made in half with Verdejo and Palomino Fino grapes, a variety in danger of extinction in the DO Rueda, since its plantation is currently prohibited, but of which our cooperative winery conserves some hectares that we dedicate to this special production.

’61’ Gold in Branch It is golden in color, clean and bright and in it we find aromas with nuances of dried fruits and raisins and a slightly toasted flavor. A perfect pairing for a flavorful dish like these stewed artichokes for the preparation of which you will need

The ingredients that you will need are:

  • 600 grams of potato
  • five finished artichokes
  • onion
  • carrot
  • Garlic
  • ketchup
  • parsley
  • olive oil
  • a glass of Verdejo Cuatro Rayas

 

Follow the steps!

-We start by making a good sauce with onion, garlic, potato, carrot and parsley.

-We let everything cook until well poached.

-We add a little white wine and tomato sauce.

-We add the artichokes at the end, because they are already cooked.

-We move everything well so that all the aromas are impregnated and the only thing we have left is to plate.

A traditional and really easy stew to prepare. By the way! Do not forget to add a pinch of salt.

We recommend that the wine be served at a temperature between 8ºC and 10ºC to taste all its properties.
